This is how it went down on Paddy's day. We've just recovered from the Christmas dinner-ésque food coma. In case you ever wondered, this is what you'll need to cook Guinness Stew with Colcannon:
Serves an office of 30.
Prep 4 hours (give or take red wine intake).
Stew Ingredients:
- 8 large, white onions
- A lot of thyme
- A bulb of garlic
- 7kg braising steak
- 20 tbsps corn flour
- 3 large cans of Guinness (it definitely turned out to be more though)
- 1½ liter beef stock
- Parsley chopped to serve (ended up being forgotten about)
Colcannon Ingredients:
- 5 kg potatoes (with some well honed Gaelic/Gael arms for the peeling)
- 500g butter (sans diet)
- 500g sliced back bacon
- 4 small savoy cabages
- 500 ml double cream (and a cardiac death wish)
Chops things up with usual OCD analness. Put stuff in pots at intervals. Stir. Garnish table with pots of shamrock and self with Irish rugby jersey. Gobble. Finish with a trip to the Murders. Beat some boys at pool.
